Client need for suitable, fresh foods with minimal preservatives has led in current years to improved sales of refrigerated, prepared-to-eat food consequences that clients often reheat. But inferior refrigeration of these foods is a significant cause of foodborne illness, mainly listeriosis.
But there are several proven protection we can all take to diminish the risk of listeriosis at house. This possesses following the use-by date of unopened prepackaged food consequences; And not keeping food packets too long after commencement , ideally depleting them within two days.
Unfortunately, one of the numerous influential steps we all take is something many of us don’t do: completing sure our fridges at home are below 5℃.

In our study on listeriosis risk characteristics, we discovered that although 79% of respondents knew the extent of refrigeration, 84% did not know that refrigerators should be at or below 5℃. Further , 65% said they “don’t check” the temperature of their refrigerator.
Additional research shows that 50-85% of domestic refrigerators operate at temperatures more elevated than suggested guidelines when taking a single temperature reading.
We even glanced at how the temperature fluctuated in the fridge using wireless detectors to track changes on a minute-by-minute basis over six consecutive days. Surprisingly, we discovered that none of the refrigerators were below the suggested 5℃ for the entire five days.
Almost 91% of fridges had an intermediate temperature that overextended the guided 5℃. General, the average operational temperature ranges from -1.7℃ to 17.9℃. To put this into perspective, the moderate summer temperature in the United Kingdom in 2016 was 14.9℃.
Not Cool Enough
Also we found a substantial correlation between how customers use their fridges and how the temperature differences. For example, there was about a 4.5℃ disparity between the inside of the fridge and the door warehouse area.
Lots of people we spoke to were perplexed about what the actual working temperature should be and how the fridge’s dial ground relates to that. But it’s not easy to understand – we’ve shown that there is no significant correlation between average working temperature and dial surroundings.
Nobody likes to subject food to danger storage temperatures, which is why we all have refrigerators in the first place. But we can’t wish them to consistently be at the right temperature – they fluctuate.
Whatever the fridges in this study felt cold to the touch and their proprietors acknowledged they were at the correct temperature, the only way to truly tell is to use a refrigerator temperature thermometer.
